Have you ever had one of those days where you just want a biscuit?
There is something so comforting about a good ol' biscuit with butter and jelly,
or maybe even a sausage biscuit. I prefer my sausage biscuit with grape jelly on
it, but Hubby and Miss S like theirs with mustard and ketchup.
I have dabbled with making homemade biscuits before, but today I decided it was time
for this mama to figure out how to make a homemade gluten free biscuit.
Don't let the word homemade scare you away though because these biscuits were
quick, and oh so easy!
Ingredients:
1 cup gluten free flour
1/2 cup sour cream
1/2 cup butter
1 1/2 tsp baking powder
1/4 tsp salt
(If you use regular, self rising flour, you won't even need the baking powder
or salt.)
I used this gluten free flour...
Instructions:
Add butter and sour cream to your mixing bowl. Whisk together until blended.
Next add flour, baking powder, and salt.
Mix all ingredients together using a wooden spoon.
Your dough will be slightly thick.
Drop dough into a muffin tin to create a round biscuit shape.
Bake at 400 degrees for about 20 minutes.
(Next time, I will smooth out the top of the dough just a bit before baking to try to
create a little prettier biscuit shape.)
The aesthetic is the only thing I would change though. These biscuits were
delicious. I know when Miss S wakes up to find out she can actually eat a biscuit
she will be thrilled! The gluten free life is hard sometimes!
